Ingredients
> 3-1/2 cups cooked Macaroni (elbow shape)
> 1-3/4 cups Cheddar Cheese (low fat)
> 1-3/4 cups 2% Cottage Cheese
> 1/2 cup Evaporated Milk (fat-free)
> 1/3 cup chopped Onion
> 2 tbs crushed Parsley (Ajwa’en k pattay)
> 1 tspoon Mustard
> 1/4 Teaspoon pepper
> 1/2 Teaspoon Salt
Method:
In a microwave bowl, put onion on high for one minute until tender; drain.
Add the macaroni, parsley and cheddar cheese separately.
In a blender, combine the milk, mustard, salt, pepper and cottage cheese. Cover and process until smooth.
Mix all these ingredients into macaroni mixture.
Pour into a 1-1/2-qt. baking dish coated with cooking spray.
Bake it uncovered, at 350° for 20-25 minutes or until lightly browned.
