Ingredients

– 1 bundle of dry Yeast (Khameer)
– 4 tsp olive Oil
– 2 tsp Sugar
– 2 to 3 cups flour
– 2 Cloves (Long (in roman) and Garlic­
– 1 cup warm Water
– 2 tps vegetable shortening
– 2 Teaspoons Salt

Method:

Take a bowl, mix the sugar, water and yeast (Khameer) to form a paste.

Add the salt, flour and mix it, either by mixer or hand.

If you are using a mixer, mix for 1-2 minutes before moving to the dough and mixing for an extra 3 minutes, add more water if dry.

If mixing by hand, mix in bowl to combine before turning out onto a floured surface, using 1-2 tablespoons and kneading for an additional 6-8 minutes.

Place the dough in a lightly oiled bowl and cover with a towel. Set separately to increase in the warmest part of the kitchen for 45 minutes.

After 45 minutes, cut the risen dough into two equal pieces and knead each portion into a round. Cover again and let rise for 15 to 20 minutes.

Place dough in a freezer and freeze for 2-3 days. You can freeze it for less or more time as needed.

How to make Pizza:

Remove dough from freezer and allow to soften for 45 minutes to 1 hour before using. The dough still being cool. Allowed it hold shape and be rolled lightly.

Heat the oven to 450-475 degrees F. Place oven frame on the lowest stair and place pizza stone on it.

Once the oven is heated, carefully remove the stone using oven hands and place on a safe surface.

Sprinkle pizza stone with cornmeal. Roll and stretch dough into a long or round band. 1 large, or 2 smaller. Transfer to stone or sheet.

Blend 1-2 tbs of olive oil with hard-pressed garlic and brush garlic oil over the dough.

Place in the oven and pre-bake empty outside for 4-5 minutes.

Now layer your coatings and return pizza to oven.

Bake pizza until lightly browned, around 10-12 minutes.
