Ingredients
– 1 cup mashed cooked potato
– 1/2 cup mashed Banana (about 2 small)
– 1 tsp ground Cinnamon (Daar Cheeni)
– 1 cup evaporated skim Milk
– 2 beaten egg yolks
– 2 Tbs packed brown Sugar
– Nonstick Cooking spray, as required
– 1/4 cup Raisins (Kishmish)
– 1 tbs Sugar
– 1/2 tsp Salt
Method:
Take a bowl, mix together potato and banana.
Add milk and blending well.
Add brown sugar, egg yolks, and salt, mix it carefully.
Spray a 1-quart casserole with nonstick cooking spray.
Transfer potato mixture to casserole dish.
Combine Raisins (Kishmish), sugar, and Cinnamon (Daar Cheeni). Sprinkle over top of potato mixture.
Bake in a heated 325º F oven for 40-45 minutes, until a knife inserted in the center comes out clean.
